The wonderful thing about this Beer Cheese Dip is that it just takes minutes to make. In under 15 minutes, you’re serving up a hot, delicious dip that looks like it took some major expertise, so they never need to know that it really only took about 10 minutes…LOL!
Choosing the Right Ingredients

You can choose to use whatever kind of cheese you like. I used a combo of Sharp Cheddar and White Cheddar. Really, any good melting cheese would be fine like Gouda, Swiss, or Fontina.
Whatever you choose, I would do a combo with the Sharp Cheddar as your base. Also, definitely shred your own cheese. Pre-shredded cheese does not melt well.
You can shred it on a cheese grater or in your food processor. It seriously took me only three minutes to shred the cheese on my grater.
You could also shred the onions or just mince them very fine. You don’t want chunks of onion; you’re really just looking to get the fresh onion undertone.

Cooking Instructions
The rest is all made on the stove in a medium-size pan.
You start by melting the butter then add all your other ingredients in order one by one, so within about 6 minutes, you’re done!
Remove from the heat and put it right into a serving dish, and it will thicken up as it sits.
Serve this dip nice and hot, so remember to start your oven for your hot pretzels before you make the dip.

Beer Cheese Dip
Equipment
- 1 Cheese Grater
- 1 Med Sauce Pan
Ingredients
- 3 TB Butter
- 3 TB Flour
- 2 TB Finely Minced Onion
- 3/4 Cup Half & Half
- 2/3 Cup Beer Lager but not Dark Beer
- 1 Tsp Worcestershire Sauce
- 1 Heaping Tsp Dijon Mustard
- 1/2 Tsp Garlic Powder
- 1/4 Tsp Paprika
- 1/4 Tsp Salt
- 10 Oz Sharp Cheddar Cheese Shredded About 2 1/2 Cups
Instructions
- Melt Butter in Med Sauce Pan and add minced onion to cook for 2 minutes
- Add Flour and Whisk for 1 minute
- Add Half & Half in a slow steady stream while whisking and cook 1 minute
- Add each remaining ingredient one at a time while whisking
- Remove from heat and put in serving bowl
- Dip will thicken as it cools
- Serve with Hot Pretzels or an array of breads, crackers or celery
