They can be served as an appetizer with dipping sauce or as a vegetable side dish. I love them as an app dipped in the Honey Dijon Mustard Sauce!! So darn yummy and easy to make.

Simple Prep, Big Flavor

Start by microwaving and finely chopping broccoli. Mix it up with shredded cheddar cheese, crumbled bacon, chopped onion, Colby jack cheese, flour, eggs, and garlic powder.

Feeling adventurous? Add a dash of Sriracha or hot sauce for that extra kick. After a good mix, let it chill in the fridge for a bit to ensure it holds its shape.

Honey Dijon Magic

While your cheesy broccoli mix chills, whip together the Honey Dijon Mustard Sauce. It’s a quick blend of sour cream, mayo, Dijon mustard, honey, and a hint of fresh lemon.

Only five minutes, and you’ve got a divine dipping sauce ready to elevate your bites.

Baking Bliss

After an hour in the fridge, form the mixture into one-inch balls. I use a TB measuring spoon and make heaping size balls.

Then, roll in panko and parm, and place them on a parchment-lined baking sheet drizzled with olive oil. I then spray them with cooking spray so that they get nice and crispy!

You’re using minimal oil so they’re not greasy like deep frying but taste just as good!

Bake these little balls for about 30 minutes at 400 degrees then I finish them off under the broiler for 3 minutes.

Make-Ahead Marvel

Here’s the bonus – you can prep the mixture and dipping sauce the day before. Just cover in plastic and put in the fridge the day before.

Cheesy Broccoli Bites

A scrumptious little ball of minced broccoli, cheese, bacon and bit of onion all rolled up and dipped in a honey mustard dijon sauce

Equipment

Ingredients
  

  • 2 Cups Blanched and Minced Broccoli Florets
  • 1/2 Cup Minced Cooked Bacon Approx 5 Slices
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Cup Shredded Colby Jack
  • 1/4 Cup Finely diced Onion
  • 3 Eggs
  • 2 TB Flour
  • 1/2 Tsp Garlic Powder
  • Salt & Pepper to taste
  • 1 Cup Panko To Roll Balls in
  • 1 TB Romano or Parm Cheese Add to Panko
  • Olive Oil to drizzle on pan
  • 1 TB Sriracha or a couple of drops of hot sauce if you like a little spice Totally optional

Honey Dijon Mustard Dipping Sauce

  • 1/2 Cup Sour Cream
  • 1/4 Cup Mayonnaise Hellmans
  • 1/4 Cup Grey Poupon Dijon Mustard
  • 2 TB Honey
  • 1 TB Fresh Squeezed Lemon Juice

Instructions
 

  • Cut Broccoli in florets and microwave in bowl with two inches of water for 5 minutes
  • Finely chop cooked Broccoli
  • Cook and crumble 5 slices of Bacon
  • Add Bacon, 1 Cup Shredded Cheese, Finely Chopped Onion, 2 TB Flour, 3 Eggs, 1/2 tsp Garlic Powder, Salt and Pepper and the Sriracha or Hot Sauce if you desire all to the broccoli and mix well
  • Refrigerate Broccoli mixture for l hour
  • Cover a pan in parchment and drizzle with Olive Oil
  • Using a TB make one inch balls of the Broccoli Mixture and roll in the Panko and Parm
  • Place on parchment lined pan and spray with Oil
  • Bake for 30 minutes at 400 degrees, then Broil for 3 minutes until golden brown
  • Serve with Dipping Sauce

Dipping Sauce

  • Mix all ingredients together and chill
