This method guarantees eggs that peel easily and have the perfect bright yellow yolk. One more tip? Use week-old eggs—super fresh eggs can be tricky to peel!

To keep things convenient, my local liquor store (Binny’s) sells bottled olive brine, but you can also use brine from a jar of cocktail olives—just make sure it’s oil-free.
In addition to the olive brine, the yolk mixture includes:
- Vodka – It’s subtle, but adds a fun martini-inspired twist.
- Dry Vermouth – A key component of a true martini.
- Sriracha or hot sauce – A little heat to balance the richness.
- Finely chopped green olives – Enhancing the briny goodness.
Because of all the liquid ingredients, there’s no need for extra creaminess—just mix well, and you’ll get the perfect consistency for piping.
How to Assemble & Garnish

Once the yolk mixture is prepared, it’s time to fill the eggs. You can use a piping bag for a polished look or simply spoon the mixture into the egg whites. If you don’t have a piping bag, a zip-top bag with a snipped corner works just as well.

Dirty Martini Deviled Eggs
Equipment
- 1 Sauce Pan To boil Eggs
- 1 Piping Bag Optional
Ingredients
- 9 Eggs I use Organic Free Range in order to get the nice dark yellow yolk – I always cook on extra to get extra yolk and just in case one breaks open in the water
- 3 Heaping TB Mayonnaise Hellmans
- 1 TB Vodka
- 1 Tsp Dry Vermouth
- 1 Tsp Olive Brine
- 1 Heaping Tsp Sriracha or Hot Sauce to taste
- 1/2 Tsp Salt
- 5 Green Olives chopped very finely
Garnish
- 8 Green Olives sliced to Garnish on each egg
Instructions
- Bring water to a boil in large sauce pan and gently add eggs and boil for 13 minutes
- Rinse till cooled under cold water or put in an ice bath
- Peel eggs and slice in half the long way and carefully remove the yolks
- Using a fork mash the yolks to fine then add Mayo, Vodka, Vermouth, Olive Brine, Sriracha and Salt – Mix well then add the finely chopped green olives
- Put yolk mixture in a piping bag and pipe into each egg white or just fill with a spoon if you do not have a piping bag. You could also use a zip lock bag and cut a hole in the tip to pipe out your yolks
- Garnish each egg with a slice of green olive and chill
