Irish Green Quesadillas
As you know from my other appetizers, I love to go all out with green-themed food for St. Patrick’s Day! With the help of spinach tortillas, I created Green Irish Quesadillas—a fun and festive twist on a classic.
Not only do they fit the holiday with their vibrant green color, but they also taste absolutely delicious.
The best part? This appetizer comes together in just five minutes, with a quick heat-up time of another five minutes before it’s ready to serve!
The “Irish” element in this dish is, of course, corned beef, making it a bit like a Reuben sandwich—but in quesadilla form.

How to Make Green Irish Quesadillas
A St. Patrick’s Day Spin on a Classic
These quesadillas are the perfect party food—quick, easy, and loaded with flavor. The base is a green spinach tortilla, which gets a flavorful spread of Thousand Island dressing.
Then comes the deli corned beef, a bit of sauerkraut, and a generous helping of shredded Swiss cheese.
The result? A crispy, cheesy, and tangy bite that’s perfect for celebrating!



Cooking Tips for the Perfect Quesadilla
To get that golden, melty perfection:
- Always place the cheese side down first in your skillet. This allows it to crisp up and melt beautifully.
- Cook for three minutes on medium-high, then flip and cook for another two minutes.
- Use a light spray of oil in your pan to get a nice, even crisp without making it greasy.
Serve It Up!
These quesadillas are delicious on their own, but if you want to elevate the experience, serve them with a side of extra Thousand Island dressing for dipping.

Irish Green Quesadillas
Equipment
- 1 Lg Skillet
Ingredients
- 1 Pkg Green Gaden Spinach Wraps I used Large Sz by Mission
- 6-8 Slices Deli Corned Beef
- 1/3 Cup Shredded Swiss Cheese
- 1/4 Cup Sauerkraut
- 1-2 TB Thousand Island Dressing
- Spray Pan with Oil
Instructions
- Spread Thousand Island Dressing on the whole wrap
- On one half layer Corned Beef, Sauerkraut and then the Cheese
- Fold in half and fry in med-high skillet that has been sprayed with cooking oil
- Fry cheese side down for 3 min then flip and cook for 2 more – check for doneness as cooking
- Cut into wedges and serve
