Irish Tater Tot Sliders
St. Patrick’s Day is here, and nothing says Irish more than corned beef and potatoes! So, I thought, why not combine them into one delicious little bite that pairs perfectly with your green beer?
I took an idea I originally used for sliders during the Super Bowl and gave it a St. Patty’s Day twist, creating Irish Tater Tot Sliders! These quick and easy bites feature savory corned beef sandwiched between two crispy tater tot rounds, topped with Swiss cheese and sauerkraut, then dipped in Thousand Island dressing.
Simple to make and absolutely irresistible!

So, without further ado, here’s how you can make these festive Irish Tater Tot Sliders for your St. Patrick’s Day celebration!
How to Make Irish Tater Tot Sliders

1. Cook the Tater Tot Rounds
Start by cooking your tater tot rounds according to the package instructions. These will serve as the “buns” for your sliders, so make sure they’re nice and crispy.
2. Assemble the Sliders
Once the tater tots are done, take one tot and place a small slice of corned beef on top. I used thinly sliced corned beef from the deli, but if you want to go the extra mile, you can cook your own corned beef from scratch.
3. Add Cheese & Melt
Next, add a slice of Swiss cheese on top of the corned beef. Place the assembled tots under the broiler for about a minute—just enough to get the cheese perfectly melted and gooey.
4. Top with Sauerkraut & Assemble
Once the cheese is melted, add a little bit of sauerkraut for that classic Reuben-style flavor. Then, place a pickle and another tater tot round on top to complete the slider. Secure with a toothpick to hold everything together.
5. Serve with Thousand Island Dressing
No Reuben-inspired dish is complete without a creamy dipping sauce! Pour some Thousand Island dressing into a small bowl for dipping and serve these tasty bites while they’re hot.

Irish Tater Tot Bites
Equipment
- 1 Foil Lined Baking Sheet
- 12 Tooth picks to secure the Tots
Ingredients
- 24 Tater Tot Rounds The flat kind to mimic a bun
- 12 Thin Slices Corned Beef
- 12 1 Inch Slices of Swiss Cheese or Grated Swiss Cheese
- 1/4 Cup Sauer Kraut
- 12 Dill Pickle Chips
- 1/4 Cup Thousand Island Dressing To use as Dip
Instructions
- Cook Tater Tots according to package
- Assemble Bites by adding one piece of corned beef that has been folded into a one inch piece
- Top next with a small slice of Swiss Cheese and put assembled tots under the broiler for one minute to melt the cheese
- Top melted tots with a bit of Sauerkraut and a Pickle Chip then the remaining top Tater Tot and secure with a toothpick
- Pour Thousand Island Dressing in a small bowl to serve as Dip for the tots
