It’s Cinco De Mayo, friends, and I hope you have some fun plans that include cocktails and yummy appetizers! If not, you don’t need to look any further because these mini Shrimp guacamole Taco Bites are the bomb!!!

The fun thing about these appetizers is they are generally easy and quick to make. That’s why I love these little mini shrimp and guacamole bites! If you want, you can prepare your shrimp the day ahead and just heat them up for a minute then assemble these little bites in mere minutes!

Preparing for the Mini Shrimp and Guacamole Bites

You do need to have some guacamole prepared for this recipe. But this too can be made earlier in the day.

I have an excellent recipe for the Best Guacamole, so you should make a big batch of that and use a little to make these bites and serve the rest with some chips and salsa and maybe my Elote Bites, and you are good to go for this Cinco De Mayo!!!

Shrimp Taco Bites Assembly

So, back to the Shrimp Bites! After quickly and easily preparing your shrimp, you just need to take a couple of minutes to assemble the little tacos.

I love Tostito Scoops, and they are perfect little vessels for these mini tacos.

You just fill them with a bit of Guacamole, and a tad of Salsa, then top it with your slightly Spicy Shrimp with a little Cilantro, and you’ve got yourself one impressive little bite that took no effort but tastes terrific!

Mini Shrimp & Guacamole Taco Bites

A dab of Guacamole, a bit of Salsa topped with a spicy bite of Shrimp all nestled into a Tostito Scoop to make a perfect bite

Equipment

  • 1 Saute Pan to Cook Shrimp

Ingredients
  

  • 8 Large Shrimp or 24 Small Bite Size Shrimp Thawed and Cleaned and Tails Removed
  • 1/8 Tsp Cayenne Pepper
  • 1/4 Tsp Garlic Powder
  • 1/4 Tsp Chili Powder
  • 1/8 Tsp Oregano
  • 1/4 Tsp Tajin
  • 1 Pinch Sea Salt
  • 3 Cranks Coarse Ground Pepper
  • 1 Oz Fresh Lime Juice
  • 2 Tb Olive Oil

To Assemble Taco Bites

  • 1/2 Cup Guacamole
  • 1/4 Cup Medium Salsa
  • 24 Small Cilantro Leaves to Garnish on Top of Shrimp
  • 24 Pieces Shrimp – If you use large Shrimp cut them in thirds – if you have tiny bite size Shrimp you will need 24 or one bag
  • 24 Chips Tostito Scoops Tortilla Chips Pick out best Chips from Bag that are whole

Instructions
 

To Make Shrimp

  • Marinate cleaned and thawed raw shrimp in everything but the Olive Oil for at least an hour
  • Heat 2 TB Olive Oil and add marinated shrimp and cook over medium heat for three to four minutes until pink and not translucent
  • Remove from heat and let slightly cool then cut large shrimp in thirds or use bite size Shrimp which will need no additional preparation

Assembling Taco Bites

  • Add 1/2 Tsp of Guacamole to a Tostito Scoop Tortilla Chip
  • Add 1/8 Tsp of Salsa on top of Guacamole
  • Top this with bite of Shrimp and Garnish with a small leaf of Cilantro
  • Fill as many chips as you have Shrimp and Enjoy!!!
